WATERFRONT: Masala Art SW Offers Regional Menu Every Monday, January is Punjab

On Mondays every month, Masala Art SW features a menu of dishes from a specific region of India. Every Monday in January, will be a Punjabi selection. Wheat is a staple. Traditional Punjabi thali consists of varied kinds of breads; some are baked in the tandoor such as tandoori roti, lachha parantha, naan and kulcha, while others are dry baked on tawa like chapatti and jowar ki roti. The cuisine of Punjab has an enormous variety of mouth-watering vegetarian as well as non vegetarian dishes with spices ranging from mild to high.

The menu is priced at $24 for vegetarian dishes and $27 for dishes with meat.

The non vegetarian menu consists of a choice of appetizers including Kairi Chicken Tikka with raw mango marinade, mint, cilantro and star anise; Lamb Cutlet with minced lamb, mint and jalapenos; and Ajwaini Fish Tikka--tilapia with carom seeds, mustard oil and chilli paste. Main courses include

Dhaba Murg--chicken morsels with onion tomato gravy and garam masala; Achari Gosht--lamb curry with pickle masala and yogurt gravy and Punjabi Fish Tikka Masala--tandoori tilapia with ginger, cilantro and green chilli.


The vegetarian menu features appetizer choices of Aloo Mattar Tikki--potatoes and green pea patty, green chillies, ginger and cilantro; Imli wala Paneer Tikka--paneer tikka/ woth tamarind marinade or Chukandar Shakarkand Kabab-- beets, sweet potato, green chilli and ginger. Main courses include a choice of Soyabean Mattar Masala--soy nuggets with pea, garlic and cilantro; Paneer Lababdar-- cottage cheese with chunky onion tomato gravy or Aloo Capsicum--potatoes with bell pepper and garlic.

All dishes are served with Maa ki Dal, Jeera Mattar Pulao and Butter Nan, dal makhani and cumin and peas pulao. For dessert, diners have a choice of Kesari Kheer--rice kheer with cashew nuts and raisins or Jalebi with Rabadi--Indian funnel cake with reduced milk.
