PENN QUARTER: 701 Restaurant Debuts Vegetarian Game-Inspired Dishes for Fall

The 701 Restaurant, will celebrate the return of fall with a game-inspired specialty menu that will appeal to vegetarians. Recently appointed Executive Chef Bryan Moscatello is bringing the earthly flavors attributed to wild game to his meatless creations with two appetizers and two entrées available beginning Wednesday, October 4th, exclusively during dinner service. These special menu items showcases dishes that are reflective of his time spent at the award-winning Calistoga Ranch in Napa Valley, part of the esteemed, five-star Auberge Resorts Collection.

“In Napa Valley vegetables play a very important part of cuisine,” says Chef Moscatello. “Restaurants are even offering vegetable-heavy, protein-light menus. I thought it would be fun to showcase meatless versions of seasonal game dishes, especially since Americans meat-eating habits have shifted in recent years.”



Salsify Confit
Standout dishes include Crispy Skin Parsnip, a take on game bird with porcini glaze, quinoa, Brussels sprouts and pomegranate, priced at $13; Salsify Confit, a take on duck leg with chicken of the woods mushrooms, braised fennel, parsley root and oyster leaf, priced at $23; Wood-Roasted Celery Root, a vegetarian version of rabbit rossini with rutabaga sformato, brioche, truffle and madeira, priced at $15, as well as Applewood-Smoked Yam, a spin on smoked venison loin with toasted spice crust, endive, sunflower jus and ash, priced at $22.

Lunch is served Monday through Friday, from 11:30 AM to 3 PM. Dinner is served Monday through Thursday, from 5:30 PM to 10 PM; Friday, from 5:30 PM to 10:30 PM; Saturday, from 5 PM to 10:30 PM and Sunday, from 5 PM to 9 PM. Valet parking is available Monday through Saturday, from 5:30 PM to 10 PM.
