- Frittelle, crispy prosciutto & ricotta fritters with salsa verde and pickled watermelon rind
- Fiori di Zucca, spring pea & ricotta stuffed squash blossoms with shaved baby fennel and pea shoots
- Moleche Tonnato, crispy polenta dusted soft shell crab with farm spring greens salad and Tonnato Sauce
- Agnello, grilled Colorado lamb porterhouse, graffiti eggplant & asparagus terrine and lemon thyme butter
- Cappellacci di Ortiche, stinging nettle & cacao de roma ravioli with sour orange & herb butter.
