GEORGETOWN: March at Via Umbria: Beef Brining, Whiskey Tasting & More

Via Umbria’s lineup of events for the month of March, include a meat brining class, a cheese and whiskey tasting, a steak tartare making class and more.
Cheese & Whiskey Tasting – Tuesday, March 14, 7:30 p.m. To celebrate St. Patrick’s Day, Via Umbria will host a cheese and whiskey tasting class, which teaches guests how to pair the two together. Via Umbria will offer guests a selection of local craft whiskeys, as well as traditional Irish whiskey, including American blended whiskey; lightly peated Irish whiskey; craft bourbon whiskey; and local rye whiskey. Each tasting will be paired with a selection of cheeses hand-picked by in-house cheese-monger Alice Bergen-Phillips to complement the big, smooth flavors of the various whiskeys.

Being the Butcher: How to Brine Your Beef Class – Wednesday, March 15, 7:30 p.m.
Join lead butcher Scott Weiss in Via Umbria’s Laboratorio demo kitchen as he takes guests through the process of making corned beef as a nod to St. Patrick’s Day. Guests will learn how to make this traditional Irish-American dish and enjoy small bites from the kitchen. Beer and wine by the glass will be available for purchase throughout the class.

Wine Tasting: Notes of Cherry – Tuesday, March 21, 7:30 p.m.
To celebrate DC’s Cherry Blossom Festival, Via Umbria will host a week full of events, starting with a wine tasting. Guests are invited to taste a selection of four Italian wines featuring notes of cherry with complimentary small bites. A valid government-issued ID must be presented.

Being the Butcher: DIY Steak Tartare – Wednesday, March 29, 7:30 p.m.
Continuing Via Umbria’s “Being the Butcher” series of meat related cooking demos, Scott Weiss invites guests to join him for a class on how to make steak tartare. The class will include a brief demonstration from Scott, followed by the chance for guests to mix together their own steak tartare and dig in. Beer and wine by the glass will be available for purchase.
