DUPONT: THere's a New Chef at The Riggsby

There's a new chef at The Riggsby, Jay Caputo, who joins the restaurant with more than 20 years of restaurant experience, including an array of accolades such as Philadelphia Magazine’s Rising Star Chef award, seven awards as Delaware’s Best Chef, and five nods as a James Beard semi-finalist for Best Chef in the Mid-Atlantic. Caputo worked closely with The Riggsby’s executive chef and owner, Michael Schlow, at his former restaurant Radius in Boston, where he served as sous chef when Schlow was awarded the James Beard Award for Best Chef in the Northeast, and the restaurant was also named Best New Restaurant by Food & Wine.

At The Riggsby, Caputo has been busy revamping the dinner menu, with additions such as Parker House rolls with foie butter, grilled Spanish octopus with fennel puree, citrus and hazelnuts, and a broken paells with chorizo, chicken, clams, mussels and crispy rice cake. The new dinner menu is complemented by a new dessert menu by pastry chef Alex Levin
